Hey Loves! Today’s recipe is so simple your toddler can make it. Ok, maybe not but they’re definitely no hassle and you will get amazing results! How about we make Gluten Free Pancakes? I think that’s a great idea and you’ll thank me later!
What’s amazing you only need 4 ingredients! Yup, only 4! You can transform these healthy vegan pancakes into a sweet or savory breakfast delight. Options are always cool, right?
So let’s get started with the ingredients.
You will need:
- 2 bananas (ripe)
- 2 cups instant oats (oat flour) – or try this one Bob’s Red Mill Oat Flour
- 1.5 cup milk of your choice, we used oat milk. Another great option is Macadamia Milk found here – Milkadamia Milk
- Dash of Cinnamon (optional)
Prep Time: 5 mins
Cook Time: 15 mins
Total Time: 20 minutes
Yield: 6 – 8 pancakes
Mash 2 ripe Bananas with a fork until smooth and not lumpy. This part is super fun, trust me!
Combine all of the ingredients and mix until smooth. The batter may be a little lumpy depending on how much you mashed the bananas.
Heat olive oil in a non-stick skillet and slowly pour ¼ cup of the batter.Cook for about two minutes on each side. Serve with your favorite toppings like blueberries, strawberries or if you’re on the Keto diet, skip the fruit and sprinkle coconut shavings and coco nibs!
Tip: Make batches ahead of time, place in freezer bags, or use these cool Stasher bags, found here – Stasher Bags. Then you can freeze them and save for later. For a quick breakfast, pop a few in the toaster before you head off to work. Cool right?
